I am hoping to soon perform a Data Transfer from my ol fat PS3 to a new
slim. How long should I expect it to take (35Gb)?

That's the method that uses ethernet? I only get 200Mbps when copy movies
to my PS3 using PMS. At that rate its 24 minutes though if you can close to
the full gigabit it might be under 10.

Compared to some of the horror stories I've heard, 1/2 hour would be great.
Some have reported that it often stalls mid-transfer and takes all night to
finalize!!
